To answer your question, I will tell you what I did as I began my learning
process in the analytical ultracentrifugation field.  First, I would
consult my instrument manuals and any supporting technical literature I
could get from the manufacturer.  Manuals often have summaries of the
scientific principles behind the instrumentation.  I also know that
Beckman has a number of well-written texts on the theoretical aspects of
all the instrumentation they sell, and other vendors may have something
comparable.  It is also important to remember that the same physics is
occuring in any centrifuge, whether or not we are observing the effects of
the force on the molecule.  This means that the parts of any AUC
literature on the non-optics-related physical phenomena involved in the technique
hold for any centrifugation technique.

As far as specific references, I would recommend:
1.  Beckman technical literature, eg. "Introduction to Analytical
Ultracentrifugation", Greg Ralston.  This is primarily AUC-oriented, but
general information is scattered throughout.  There is a good list of
references, some of which are more general.  I would also check with a
Beckman or other vendor rep to see if they have some more general
literature.
2.  Biophysical Chemistry, Part II:  Techniques for the Study of
Biological Structure and Function.   C. R. Cantor and P. R. Schimmel, W.H. Freeman
and Company, New York, 1980.  Chapter 11 is about ultracentrifugation.
