Hi Borries,

You might want to look at alpha-chymotrypsin. It exists as a monomer-dimer
system at low pH and high ionic strength but that association tends to
higher-order at pH 8 and low ionic strength. It's been well characterized in
terms of geometry, charge, association constant(s), it's cheap, ideal for
absorption optics etc..

You might even like to get copies of some of our work on this which, in
turn, should lead you to other workers' efforts.
